How to enjoy it

Peel back the corn husk and eat the steamed cake inside; the husk is a wrapper, not food. Let a freshly steamed cake cool a little before taking small bites.

A useful check

The cake may be hot and slightly sticky. Check any added ingredients if you have food restrictions; sweetness does not guarantee that a particular serving is suitable for every child.

How it may vary

The plain steamed corn version has no chili. Some cooks add sugar, while others use only the corn’s sweetness. Added ingredients and texture vary; reheated or roasted cakes can be firmer than freshly steamed ones.

A plain, soft steamed version can be a mild, non-chili option for children who can manage its slightly sticky texture. Remove the wrapper, cool it and offer small pieces with supervision.

Recipes vary. Ask the restaurant about ingredients and serving before you order.

Story & history

Fresh Corn Cakes in the Harvest Season

Fresh-corn baogu ba follows the season when tender corn is available in Guizhou. In one Shuicheng family, ears whose kernels still released milky juice were set aside for these cakes during the harvest. Mature corn was sorted for seed, household food and animal feed. A steamed cake could later be roasted and carried to school for lunch, linking the harvest to an everyday meal.
