Story & history
Tangshan Wei Zhouzi and the Miners’ Table
A local culinary recollection places Tangshan’s wei zhouzi in the early 20th century, when coal miners returning from hard, dangerous shifts valued a hearty pork-elbow meal as a reward. In 1937, chef Wang Xuehui shaped a Hongyan Restaurant version by bringing together folk preparations and local tastes. Later generations refined that restaurant dish. Its story connects this substantial cut with the working life and dining culture of Tangshan’s mining city.
