A CLOSER LOOK

How to recognize it

Slender hollow pieces that may curl or flatten when cut and cooked; often valued for a springy, crisp bite.

In the kitchen

Cooked pieces may be included in Nanjing duck-blood vermicelli soup. They add a different texture from soft duck liver.

This means duck intestines, not pork intestines or duck gizzards. It is an animal ingredient; preparation, seasoning and the offal selection vary by shop.
