How to enjoy it

Spoon up the small noodle pieces with some broth and let each mouthful cool. Chili oil can be added to taste or kept on the side.

A useful check

Contains wheat and sheep meat or its broth. Soy sauce may be added; confirm seasonings for allergies. Broth can be hot, and chili oil changes the heat.

The soft chewy dough pieces in broth are easy to spoon and share; keep optional chili oil aside and cool a small bowl.

Recipes vary. Ask the restaurant about ingredients and serving before you order.

A LITTLE SOMETHING TO READ

Story & history

Small pieces for a shared pot

Ga mianpian gets its shape from the cook’s fingers: rested wheat dough is stretched into strips, then pinched into small, thin pieces. At a May 2025 food event in Datong, Qinghai, cooks demonstrated the technique around a large pot, serving the noodles with sheep-meat broth and garlic shoots. The same handwork also belongs to home kitchens, where radish, herbs and pepper can accompany the soup. Stir-fried versions offer another way to eat these little dough pieces.
