A LITTLE SOMETHING TO READ

Story & history

Marks left by hot stones

In Jinzhong and Lüliang, thin crackers take their uneven surface from contact with hot pebbles. The marks also explain the name babing, or scarred cracker. Stones are the cooking tool, not an ingredient: break off a piece to enjoy the crisp dough.
