A LITTLE SOMETHING TO READ

Story & history

Doupi: Wuhan’s Golden Breakfast Squares

Wuhan doupi is a substantial breakfast of sticky rice beneath a golden mung-bean, rice and egg skin, rather than a sheet of tofu. Hankou’s Laotongcheng was serving doupi by 1931 and helped make the richer sanxian version a city emblem. Fillings vary: pork, shiitake and bamboo shoots are one combination, while some older versions include shrimp. The contrast between the thin pan-fried skin and soft rice is part of its appeal; try it freshly cooked.
