Story & history

Oyster omelette and a cross-strait origin legend

Xiamen’s oyster omelette belongs to a wider southern Fujian foodway; across the Strait, Taiwan’s version is called ô-á-chian and follows a similar Minnan method. A popular regional tale sets its origin in Zheng Chenggong’s 17th-century campaign to retake Taiwan: when provisions were hidden, soldiers supposedly mixed local oysters with sweet-potato starch brought from the mainland. This is an origin legend, not a verified record of the dish’s invention. The shared name and style place Xiamen’s omelette in a coastal food culture that reaches both shores.
