A CLOSER LOOK

How to recognize it

Small brown dried berries, sold whole or ground. Allspice is one spice, not a mixed seasoning or Chinese five-spice powder.

In the kitchen

Used in marinades, stews, pickles and baking; it appears in some Macanese African-chicken preparations.

Its aroma recalls cloves, cinnamon and nutmeg. Whole berries and powder differ in use; check blended seasonings for other ingredients.
