A CLOSER LOOK

How to recognize it

Oblong to slightly kidney-shaped beans. Seed coats may be cream, red-brown, dark or patterned, depending on the cultivar.

In the kitchen

Cooked until soft and mixed with pitted jujubes for one Suide huang momo filling. Cowpea seeds are also cooked with rice or in congee.

Seed color and size vary. Fresh pods and dried whole pods are different forms. Ask “是豆粒还是豆角?” (“Are these shelled beans or pods?”).
