A CLOSER LOOK

How to recognize it

Usually sold cleaned, whole, split or chopped into pieces. It contains small bones, skin and tendons with relatively little lean meat; it is not pork belly.

In the kitchen

Used in ginger-vinegar pork, braises and soups. Separate edible skin and meat from bones when eating.

Front and hind feet and butcher cuts differ; some preparations include an adjoining lower-leg section. A meaty pork hock alone is a different cut.
