A CLOSER LOOK

How to recognize it

Called 醬油膏; it is thicker than ordinary pouring soy sauce, not a paste of whole soybeans.

In the kitchen

Used for dipping or brushing onto food, including some versions of 大腸包小腸.

Sweeteners, thickeners and seasonings vary. Common products contain soy and wheat, and some include alcohol. Check the actual label rather than assuming one formula.
