Dongyang wo noodles

东阳沃面Dōngyáng wòmiàn

Starch-thickened alkali noodles with shrimp and pork tripe

A Dongyang, Jinhua bowl of machine-made alkali wheat noodles simmered with pork tripe, river shrimp, meat shreds, wood ear, egg strips and greens, then finished by thickening the broth with a starch slurry. The gravy clings to the strands in a glossy, porridge-like coat that locals call "糊答答"—soft, savory and hot rather than soupy.
