How to enjoy it

Gently mix the rice-jelly pieces with their dressing. Use chopsticks or a spoon, and ask for less chili before the dressing is added if you prefer a milder serving.

A useful check

Rice tofu is made from rice, but its dressing may contain soy, wheat, sesame or peanuts. For vegetarian or vegan dining, confirm the dressing, stock seasonings and cooking oil; the name alone does not establish suitability.

How it may vary

The moderate heat estimate refers to a chili-dressed version. Chili quantity, pickles, herbs and crunchy toppings vary, and Sichuan-pepper numbness is distinct from chili heat. This entry describes the cold dish, not a hot rice-tofu casserole.

Rice Tofu in Guizhou: A Summer Snack, a Street Bite

Despite the name, Guizhou mi doufu is soft rice jelly, not soy curd. In Yuping’s Dong communities, the chilled version is a summer snack and also appears at banquets. In Anshun, it is known as liangfen and has a place in street-food traditions as lunch or an afternoon snack, sometimes alongside spicy skewers. Names and serving rhythms vary by locality.
