Beef oxtail

牛尾Niúwěi

Oxtail (牛尾) is the tail of cattle, usually sold cut into bone-in joints. Slow cooking makes the meat tender and gives the sauce a gelatinous richness.

A CLOSER LOOK

How to recognize it

Cut pieces have a central tail bone surrounded by meat, connective tissue and some fat.

In the kitchen

Used in soups and slow braises, including red-wine oxtail. Eat the cooked meat around the bones; the bones are not edible.

Joint size, fat trimming and seasoning vary. Oxtail is a specific beef cut, not a substitute name for boneless beef.
