How to recognize it

Usually an oval fruit with yellow rind and juicy segments. This entry is for fresh lemon, not salted or preserved lemon.

In the kitchen

Juice adds acidity to sauces and dishes; zest adds citrus aroma. Some Macanese African-chicken preparations use lemon juice.

Varieties differ in acidity, rind and seeds. Fresh juice, bottled juice and preserved lemon are not identical ingredients; check the preparation.
