A CLOSER LOOK

How to recognize it

Hon mirin is made with rice, rice koji and alcohol. Mirin is not rice vinegar.

In the kitchen

Adds sweetness and gloss to sauces, simmered dishes and marinades.

Hon mirin and mirin-style seasonings differ in alcohol, sugar and salt. Check the label; cooking does not by itself establish that a dish is alcohol-free.
