A CLOSER LOOK

How to recognize it

The dried fungal sclerotium has a dark brown outer skin and a white to pinkish interior. Prepared poria may appear as pale cubes, slices or powder; the powder is milled poria, not wheat flour.

In the kitchen

Ground poria is mixed with wheat flour in one version of the thin wrappers of Beijing fuling jiabing. The sweet filling is a separate part of the pastry.

Poria may appear as whole pieces, pale cubes, slices or powder. In the pastry, the poria ingredient and the sweet filling are separate components.
