A CLOSER LOOK

How to recognize it

A pair of narrow, elongated shells encloses the meat. Chinese razor clams have roughly rectangular yellowish-brown shells with pale interiors, unlike rounder clams or fan-shaped scallops.

In the kitchen

Cooked in noodle soups, including some Taizhou ginger soup noodles, or stir-fried with ginger and scallion. Eat the meat, not the shell.

Species, size and preparation vary; some products are dried. This entry covers the shellfish ingredient, not a guarantee of species in a restaurant serving.
