A CLOSER LOOK

How to recognize it

Usually a red to deep ruby liquid. It is different from rice wine, red-wine vinegar and grape juice.

In the kitchen

Adds wine flavour and acidity to sauces and braises, including red-wine oxtail. Cooking does not guarantee that all alcohol is removed.

Grape variety, sweetness and alcohol content vary by wine. If avoiding alcohol, ask whether wine is used; do not assume a cooked dish is alcohol-free.
