Sweet-corn drink

Sweet-corn drink

玉米汁Yùmǐ zhī

A pale-yellow, smooth corn drink with a rounded sweet-corn flavour. Cooked kernels are blended with water and strained; sugar sweetens this representative version. Its creamy appearance does not itself mean it contains milk.

Specification
Cook fresh sweet corn, remove the kernels, blend with water, simmer the mixture with sugar and strain out the coarse pulp. Corn-and-water versions without added sugar exist. Other recipes add milk, peanuts or sesame; packaged products have their own formulas.

How to enjoy it

Stir gently if it settles, then sip warm or cooled. Let a hot serving cool first; it is a drink, not a bowl of corn porridge.

A useful check

The selected corn, water and sugar recipe is vegan and vegetarian. Dairy, peanut or sesame variants are not covered by that ingredient assessment; check the recipe or label.
