A CLOSER LOOK

How to recognize it

Chinese mianjiang and dajiang names cover pastes whose flour or bean base and seasoning depend on the product; this ingredient does not specify one formula.

In the kitchen

Stirred into braising liquid, including the sauce for Shangzhou pork-and-vegetable stew.

Check the actual paste for wheat, soy and other allergens or animal additions. Colour alone cannot identify its base; do not assume it is a specific sweet wheat sauce or soybean paste.
