A CLOSER LOOK

How to recognize it

Moist, soft, coarse gray-green pulp with a tangy fermented aroma; not white tofu cubes or hairy fermented tofu.

In the kitchen

Cooked with seasonings into a soft stir-fried dish. Traditional versions may use sheep fat or pork fat, so a finished dish is not necessarily vegetarian.

Color, moisture and sourness vary with processing. This entry covers the plain pulp, not douzhi liquid, purified mung-bean starch or the seasoned finished dish.
