A CLOSER LOOK

How to recognize it

Look for tender green stems, leaflets and sometimes curling tendrils. These are leafy vine tips, not mung bean sprouts or pea pods.

In the kitchen

Used in stir-fries, soups and hot pots, and as optional greens with Angu pork trotter soup. A dish containing them may still include meat or meat stock.

Leaf size and tendrils vary by variety. Ask for 豌豆尖 if you want leafy vine tips; the broader term 豆苗 may need clarification.
