A CLOSER LOOK
How to recognize it
A sour, fruit-scented condiment made with Yunnan sour mugua, a Rosaceae fruit group distinct from tropical papaya. One chef’s version infuses cut fruit in white vinegar with rock sugar, then removes the fruit.
In the kitchen
Use in the dressing for Nanjian layered pea jelly or other cold dishes.
Fruit species and vinegar-making methods vary; this infused version is not a claim that every local vinegar uses added white vinegar or sugar.
