A CLOSER LOOK

How to recognize it

Thickened roots with an outer skin and fleshy interior. Burgundy skin with orange flesh is one familiar form, but colors vary. Sweet potato belongs to the morning-glory family; it is botanically distinct from the potato, Solanum tuberosum.

In the kitchen

Cooked, peeled and mashed for Qixian sweet-potato purée, which is finished with sugar and sesame oil.

Cultivars differ in color. This is the root rather than extracted sweet-potato starch.
