At the table
Expect a distinctly bitter drink. Take a small sip first; if it is served hot, let it cool to a comfortable temperature.
The name does not identify every herb in the cup. If you have ingredient restrictions or allergies, check the blend before ordering.
Bitterness, concentration and ingredients vary by maker. Do not assume that “twenty-four” is a fixed recipe or a guarantee about added ingredients.

A LITTLE SOMETHING TO READ
Story & history
Twenty-four flavors, then a sweet bite
Ershisiwei literally means “twenty-four flavors,” but the name does not fix the recipe: local blends may contain 18 to 28 herbs. It sits near the bitter end of Guangdong’s liangcha range, and liangcha is brewed from herbs rather than tea leaves. In Guangdong, a bitter cup may be followed by a piece of sweet, crisp preserved fruit, a “sending-mouth fruit” that softens the last taste. The cup and sweet bite turn the bitterness into a small everyday ritual, while each maker keeps a different blend.
