How to enjoy it

Stir the toppings into the porridge and eat with a spoon. Let each spoonful cool. Add crisp garnishes gradually if you want some crunch.

A useful check

Contains fish and usually squid; peanuts and pork may also be present. Other toppings or sauces can add shellfish, egg, soy or wheat. Ask about the actual bowl if you have allergies. Check fish for small bones; for children, remove whole peanuts and cut chewy toppings as needed.

How it may vary

Seafood makes the usual bowl neither vegetarian nor vegan; the stock may also contain meat. Toppings vary by shop. The representative recipe has no chili; white pepper and ginger are distinct from chili heat, and chili sauce is an optional addition.

A LITTLE SOMETHING TO READ

Story & history

Boat congee and the Pearl River Delta’s Danjia boat community

In the Pearl River Delta, boat congee is associated with the Danjia boat community. Around Liwan’s Lychee Bay in the Guangxu era, sampan sellers cooked rice porridge with whatever fresh fish or shellfish they had caught. When land-based shops adopted the dish, toppings became more regular and thin, crisp fried pastry was added. The shop style pairs soft porridge with crisp garnishes.
