A LITTLE SOMETHING TO READ
Story & history
The little bubbles of Sanyuan
This account describes a tradition or story, rather than an established historical fact.
This Sanyuan pastry is named for its delicate bubbled surface. Steam during frying lifts the scalded wheat dough into a light, fragile covering around a sweet walnut filling. Huanggui is sugar-preserved osmanthus, adding a floral aroma rather than cinnamon. The pale exterior can hide pork lard in the dough, so a sweet appearance does not make it vegetarian.
