A CLOSER LOOK

How to recognize it

Usually a pale, fine meal made from blanched almonds. It is ground nut, not wheat flour or apricot-kernel powder.

In the kitchen

Used in tart shells, cake batters and fillings, including some coconut tarts. Contains almonds.

Skin-on versions have brown flecks; grind size varies. Unsweetened almond flour differs from sweetened almond paste. A pastry containing it may still contain wheat, egg or dairy.
