A CLOSER LOOK

How to recognize it

Parsley is Petroselinum crispum, sold in flat-leaf and curly-leaf forms. It is distinct from coriander and celery.

In the kitchen

Wash before use. Chopped leaves and tender stems flavour sauces, salads and cooked dishes, including Portuguese-style salt-cod cakes.

Flat and curly varieties differ in leaf shape and flavour. Fresh and dried parsley are not identical in flavour intensity; use the form specified by the recipe.
