A CLOSER LOOK

How to recognize it

Usually pale yellow chunky ginger pieces with visible rhizome nodes. Young ginger is relatively crisp and tender; it can be sliced or minced for cooking.

In the kitchen

Used as an aromatic in fish dishes, stir-fries and sauces; tender pieces may also be served as a pickle.

Brine seasonings, saltiness and ginger maturity vary. This entry covers Sichuan-style brined ginger, rather than sweet vinegar-pickled sushi ginger.
