A CLOSER LOOK

How to recognize it

A clear liquid with a rice-and-alcohol aroma; appearance alone cannot distinguish it from water or other clear spirits.

In the kitchen

Added to marinades and cooked dishes; some ba-wan pork fillings use it.

Pure-rice and blended products differ in composition and strength. Check the label. It is not sweet fermented rice mash or Shaoxing wine; cooking does not guarantee removal of all alcohol.
