A CLOSER LOOK

How to recognize it

Small hard pale grains after drying; not raw glutinous rice or already fried puffed rice.

In the kitchen

Cook in water for porridge, or fry to puff before using in a particular recipe.

Plain yinmi is rice; soups and porridges may add sugar, beans, animal broth or fat. The finished dish needs a separate ingredient check.
