Doufuniang soybean porridge

豆腐娘Dòufuniáng

Warm ground-soybean porridge

A warm, thick soybean dish associated with southern Zhejiang, including Jingning She communities and Wencheng. Ground beans are cooked with their pulp rather than formed into set tofu. Its soft, slightly grainy texture carries a gentle bean aroma. Toppings and seasoning vary, so a bowl may contain seafood.

How to enjoy it

Eat with a spoon, letting each spoonful cool. Stir in the toppings if desired; this is a savory soybean dish, not a sweet rice porridge.

A useful check

Contains soy. Some versions also contain squid or dried shrimp; check toppings, cooking fat and stock before choosing a vegetarian or vegan serving. Confirm the actual recipe for allergies.

The soft base may suit a child who can eat this texture. Cool each small spoonful and check for chewy seafood toppings and relevant allergies.

Recipes vary. Ask the restaurant about ingredients and serving before you order.

A LITTLE SOMETHING TO READ

Story & history

The “mother of tofu” at the table

Doufuniang’s name means “mother of tofu”: ground soybeans go into the pot before the curd-setting stage of tofu making. In Jingning’s She communities, this familiar home dish also welcomes guests. Grinding and cooking create its distinctive soft, grainy texture; herbs and, in some versions, seafood add contrast.
