A LITTLE SOMETHING TO READ

Story & history

A Chengdu dish whose name does not guarantee lung

“Fuqi” means a husband-and-wife pair. The Chengdu Fuqi brand dates to 1933; its story links the name to cooks Guo Chaohua and Zhang Tianzheng. The brand’s listed main ingredients are beef, beef head skin, heart, tongue and tripe; lung is not on the list despite “fei pian” (“lung slices”) in the name. The name alone cannot tell you which cuts another restaurant uses.
