Weining xiaobaba beyond breakfast
In Weining, xiaobaba may be eaten at breakfast, sometimes with corn or buckwheat porridge, and also as a small bite after dinner. It is made at home and shared with relatives or friends. The crescent-shaped dumpling brings together a buckwheat-and-wheat wrapper, tofu and, in the ham-filled version, Weining cured ham. Its folded edge helps hold the filling in as a covered pan turns the base crisp.
