Three ways to start in Beijing
- For a shared main meal: Peking duck (北京烤鸭). Ask what comes with the order.
- For a crisp, savory bite: Beijing hubing (北京糊饼), with cornmeal, chives and egg. Ask about dried shrimp.
- For something sweet: wandouhuang (豌豆黄), a smooth pea cake rather than a sponge cake.
Understand the roast-duck order
Peking duck means roasted duck with browned skin. Treat it as a dish to plan around: ask whether the menu offers a whole duck, a smaller portion or another serving size, and what comes with it. Do not assume every restaurant sells the same package.
A famous name is only the beginning of the decision. If you want a lighter meal, share it with your companions and choose the rest of the table around it. If you avoid duck or animal products, move to a different dish rather than relying on the accompaniments to make a complete meal.
Look for contrast in the smaller dishes
Beijing hubing is a thin cornmeal cake topped with Chinese chives and egg and cooked to a crisp base. Dried shrimp is a common addition. That makes it a good example of why an egg-and-vegetable name alone is not enough to judge a dish’s ingredients.
Wandouhuang has a completely different texture: cooked peas and sugar become pale yellow cakes. Expect a smooth, dense sweet snack rather than a bread-like cake.
Fit the food around your own day
Choose a main meal and one smaller item you want to recognize if you see it. Keep a second option in reserve rather than filling every gap in your day with food commitments. Check the menu before making a special trip for a particular dish.
Before ordering a snack, check whether the displayed price is for one piece or a portion. For a shared meal, check the portion with the staff. This keeps your plan flexible without inventing a budget or assuming that every serving is the same size.
