A CLOSER LOOK

How to recognize it

Commonly called seeds, these tiny seed-bearing fruits may remain attached to dried, turned-out fruit walls or be scraped loose. They are not agar or grass jelly.

In the kitchen

Rubbed in water containing calcium, they release pectin; the strained liquid sets into aiyu jelly.

Sold loose or still attached to the dried fruit wall. Water composition and processing affect how the gel sets; a ready-made jelly powder is a different product.
