A LITTLE SOMETHING TO READ

Story & history

A legend behind Hunan chopped-chili fish head

Xiangtan’s chopped-chili fish head is usually made with bighead carp: the head is steamed under chopped pickled chilies. One local legend says Qing-era writer Huang Zongxian, leaving home for fear of literary persecution, was served this dish in a farmer’s home and later asked his cook to refine it. The story is not proof of a verified inventor. The dish’s clear signature is the pairing of rich fish head with sharp Hunan chilies.
