At the table
Eat with a spoon after letting the porridge cool to a comfortable temperature. The nickname “local coffee” refers to the grain porridge, not a coffee drink.
Barley contains gluten. The plain grain-and-water recipe is plant-based, but check any added toppings or accompaniments separately.
A smooth, lightly thick grain porridge with mild cereal flavor is easy to serve in a small bowl; let it cool and check for any optional additions.
Recipes vary. Ask the restaurant about ingredients and serving before you order.

Story & history
A bowl nicknamed local coffee
In Taixing, yuanmai, a type of hull-less barley, is finely milled for xianzi porridge. Its pale brown color and grain aroma have earned it the nickname “local coffee”; coffee is not an ingredient in the traditional porridge. This everyday food also belongs to a wider Jiangsu tradition, with related porridges known by different local names.
