A LITTLE SOMETHING TO READ

Story & history

A town’s early breakfast that traveled with Henan migrants

In Xiaoyao Town, the local rush for peppery soup begins soon after 5 a.m.; visitors often arrive closer to midday. Water-fried buns and fried dough snacks share the table with the thick bowl. From the 1970s, people from Xiaoyao carried the soup-making tradition to other cities and opened breakfast stalls, turning a local morning meal into a taste of home for many Henan people living away.
