A LITTLE SOMETHING TO READ

Story & history

A potato dish named for its grater

In northern Shaanxi, yangyu caca turns potatoes into something substantial enough to be both a dish and a staple. Its name recalls the grater used to make the shreds. Wheat flour clings to the moist potato before steaming, creating a soft coating. The same steamed base can be dressed with vinegar and chili oil or returned to the wok with peppers and optional meat.
