A LITTLE SOMETHING TO READ

Story & history

An old-friend name and a cook’s craft

“Old friend” in laoyou fen is a name, not an ingredient. One Nanning tale links it to a tea-house owner making a sour-spicy noodle meal for an unwell regular, who later offered a plaque honoring their friendship. This is a naming legend, with different versions of the plaque’s wording. In everyday craft, cook Huang Xueying emphasizes fermented bamboo shoots and fermented black beans, and frying garlic before the other aromatics. Her approach preserves a recognizable local flavor while other shops adapt their bowls.
