A LITTLE SOMETHING TO READ

Story & history

Flavor in the broth, choice in the dip

Yak hot pot brings meat, broth and vegetables into one simmering dish. Yak-bone stock forms the base, with vermicelli and vegetables around rib pieces and other yak meat. A simple broth leaves room to choose a separate dip. Chili, scallion and coriander are one combination; sesame paste or fermented tofu are other optional choices. The vegetable mix varies, so the finished pot and each diner’s dip need not taste the same.
