A LITTLE SOMETHING TO READ

Story & history

A stuffed chicken for the family table

In Yanbian, jiangmi chicken is associated with family celebrations and holiday meals. Jiangmi is glutinous rice: it is soaked, tucked inside a whole chicken with ginseng and dried fruit, and steamed slowly. A New Year family meal in Yanji also includes pine nuts in the filling. The dish brings meat and rice to the table together, while its use of ginseng connects it with a familiar ingredient of the region.
